Sujibiki 24 cm. from Seki Kanetsugu made in Japan. The blade is molybdenum stainless steel. The blade is sub 0° treated to -70°C after quenching which gives hardness. The handle is pakkawood. Sujibiki knives are used for thinly slicing meat, fish and poultry.
